Marsha is on a mission to re-imagine what a chicken restaurant menu can achieve.
So they use as much of the bird as they can, finding creative ways to serve not only thigh and breast, but also skins, liver, gizzard and heart. And they do this using higher-welfare, free-roaming chickens from the Soanes Poultry family farm in Yorkshire, where the birds are fed the highest-quality grain, crafted from years of arable farming expertise.
Their minimal-waste approach extends to the cocktail menu too - they re-use ingredients from the kitchen that would otherwise go to waste. And they re-love vintage items by putting them front and centre as our furniture or light fittings. Like the humble ingredients in the kitchen, they try to go back to basics.
